Smoothie Recipe ∗ Protein Packed Spinach Smoothie

This delicious tropical protein packed smoothie is sure to please. Great for parents who want to sneak veggies and protein to the little ones who don't like green stuff. Word to the wise: for picky eaters, hide smoothie in an opaque glass or tumbler. I won't lie, it doesn't look appetizing but one sip and your taste buds will be sold and your tummy will dance the happy full dance! Enjoy.

Protein Packed Spinach Smoothie

Ingredients

  • 2 cups fresh spinach leaves
  • 2 bananas, cut into chunks
  • 1 ounce firm tofu
  • 2 tablespoons unsweetened shredded coconut
  • ½ cup frozen peach slices
  • ½ cup frozen pineapple chunks
  • ½ cup frozen mango chunks
  • ½ cup frozen strawberries
  • 1 cup unsweetened apple juice, or to taste

Cooking Directions

  1. Place spinach, bananas, tofu, coconut, peaches, pineapple, mango, and strawberries, respectively, in a blender; pour in apple juice. Blend until desired consistency is reached, adding more apple juice as necessary.
I promise you cant taste the tofu or the spinach. It's really amazing. I love to prepare my smoothie the night before. I freeze it and in the morning I take it with me to work and leave it out. Within a couple of hours its thawed out perfectly and tastes great.
